About Aflatoxin B1
Aflatoxin B1 is a toxin produced by fungi, Aspergillus flavus and Aspergillus parasiticus, and can be very harmful to humans. Found on a variety of agricultural crops, Aflatoxin-producing fungi can contaminate crops in the field, at harvest, and during storage, thus compromising the food chain.
Aflatoxin B1 is prevalent in warm and humid conditions, and can even survive food processing. It is this ability to survive warm conditions that result in Aflatoxin B1 being monitored rigorously right throughout the food chain. In addition, Aflatoxin B1 is known to be genotoxic and carcinogenic, so food producers are keen to reduce the exposure of this potent mycotoxin to consumers.
